What's a good EV spread for Mega Garde?
I've tried the 32 HP, 28 Def and 6 SpA, and now trying the 16 HP, 2 Def, 32 SpA, 16 Spe one, but it always feels like I run into the most absurd spreads.

I run strength sap because I just like that move.
I don't even really know why this even works, and honestly I just make the most obvious plays possible because I suspect people don't expect the obvious

Your team is honestly pretty meta. Kingambit and Garchomp are the most used pokemon at the moment, with Sinistcha and Incineroar in the top 10. The megas are unusual, since if you're setting up sand you could use Mega Garchomp, but Frosslass works by itself perfectly fine. Things should start getting annoying around Ultra Ball.

I just don't really enjoy megas much, I don't know why. M-Frosslass has to mega for snow, so that's just a given, but TTar can just skip it entirely. I chose life orb for chomp just because I remember M-Chomp being shitty from back in gen 6.
Snow and Sand are kind of interesting because they increase the bulk of the setters, with aurora veil M-Frosslass has effectively +4 defense and +2 special defense, so with incineroar debuffing everything it's surprisingly long living.

The critical hits, the flinches, the misses etc that are supposed to "give little Timmy a chance" are the things he will literally put the game down forever over the first time it screws him.

Remove random flinches. Remove critical hits unless the move specifically has a crit modifier. Remove miss chance. Rebalance. You have a billion dollar franchise; you can hire people to do this. Leave the single player games as is and just fix this shit.

Will take a few casual matches to get used to it though.

Putting it next to a fake out user to help set up a shell smash helps, regular raichu is good for that seeing as it has lightningrod, sinistcha is good for healing, redirecting and defensive synergy, TR is an option but i don't like playing it with base 70 and above speed mons

Sharing a G-Stunfisk set I like.
My spread is 32 HP, 17 Def, 17 SpD, Relaxed nature. Sitrus Berry. Moves: Snap Trap, Yawn, Protect, Counter.
Basic gameplan is to use it as a lead, particularly against more offensive teams. Against non-threatening matchups or suspected set-up sweepers, you Snap, Yawn, and then Protect or immediately switch into your own. Against threatening special attackers, go straight for a Yawn or switch. Against physical attackers, Counter. It can take quite a bit of punishment, even Close Combat from M-Starraptor or Waterfall from M-Gyarados. The set can completely ruin your opponent's momentum by stalling out screens too. You can 1v1 A-Ninetales for example.

I run a team that generally runs on being naturally faster even without Tailwind, at times where I can't prevent Tailwind/TR setup you just have to have an all-purpose bulky mon to stall out as much as it can.

My go-to have been Expert Belt Thick Fat Mamoswine. It can one-shot a Life Orb Gachomp with Ice Shard, it can survive much of what a ZardY can give and threaten a KO with Rock Slide (depending on EV investment).
