Switch games use a different size scaling formula. Gonna ignore let's go and swsh because LG uses a diff one and swsh doesn't show size at all. LA, Za, and SV will convert the size into a 0-255 integer which determines its size (this is why XL and XS can get the mini/giant mark) rathee than show the actual size. XXL will always get 255 and thus be the biggest possible outside of ZA and LA as those two can add a second size modifier for Alpha which increases the size further.

Probably not, for a lot of reasons.
They were at least a little smart and made the attack drop occur at lower health. Attack dropping is so much more damning to momentum than Defense dropping, so you can't win for free if you have a double hard swap that you win.
It's also not completely free like Morepeko and Mimkyu were. You have to win the charge move race, and then get hit by one too. Peck is good for charging moves, but not the best. Dive at least seems fairly cheap though
The gorge also doesn't trigger on blocked shields, so you have to actually take the hit.
The gorge also doesn't stick when swapping, so no cheeky last health saves of the thing, only to swap into a charge attack thats more punishing for the opponent.
Cramorant also doesn't have a whole lot of versatility. Peck/Fly/Dive is pretty much the only viable set. VS Morepeko which can run a cheeky Seed Bomb to clock the often Gastrodon switch in, and Flying is not quite on the level of Ghost for indifferent neutral spam in PvP.
Remember the Aegislash is a gimmick mon to, and basically does not exist in pvp

Shadow Chandelure is a top Fire / Ghost attacker though and highly accessible in larger numbers. It's worth having a few, they help with various solo raid attempts like Genesect or Lunala.

Green passes is more personal tolerance than anything else.
Compared to everything available right now, Shadow Lampent is the most viable option available to raid right now, directly out competing Lunala while having a second purpose to boot. It's just a matter if you wanna save green passes for the likes of Zacian, Zamazenta, Rayquaza, Groudon, Necrozma or Kyurem.
Shadow Chandy ain't the worst thing to keep rolling for better IV spreads, it's just the Candy is not as valuable to legendary raids, since you can nab it anywhere. Thats one of the main benefits to raiding with greens, is that you get twice as much XL candy in legendary raids.
But, with it being number 3 ghost in non-party power scenarios, I wouldn't say your wastin them.

Short answer is you don't
Long answer is there isn't really any way to control spawns, you just catch whatever you find. You can use the yellow berries to get more catch candy, walk your buddy to get candy, or spend rare candy. There are also events that heavily skew spawn rates towards specific mons so it's easy to power those mons during those events
