Somewhat tangential, but Dark Vengeance (1998) had these enemies made from animated stained glass shards. You'd walk by a vitraux and it would shatter, then transform into a knight.
This game in general just had some really cool enemy designs.

Castlevania 64 also has glass knight enemies that jumo out of vitraux windows, which is actually a homage to a boss from Haunted Castle

That's pretty cool, DV must have done so as a homage too since they look so similar (and DV came out a year earlier from what I can tell)
