The game definitely is deep and complex, but is it infinitely? I don't think so
Studying and explaining how to get the theorical best score is a feasible thing within a lifetime. While we'll never be able to explain how to play at the level of stockfish in chess for instance
The game do have infinite skill ceiling however (at least for normal humans, who knows if people gets enhanced through tech in the future).
In a way the game being finite comes from it having such a defined frame: chess is infinite due to depending on its players' skill, learning martial arts is infinite due to body movements having so many possibilities, learning piano is infinite as you can always play faster and more complex sheets
A game like doj however starts with a purpose and with a much harder floor level, it's 5 stages and its loop is tightly crafted for its brutal experience that any curious player will have to face.

I'm a casual Shmup player. i played all touhou games, shikigami no shiro series, some other random bizarre doujinges a 3 games from cave, i'm here more for the art, also Cho Ren Sha is also epic, i'm a big x68000 fan.

Also, is unpredictability tied to depth? Because then you'd have to explain how unpredictability in a multiplayer game makes it deep, while unpredictability in playing rock paper scissors woumd probably not be

Action platformers, Hack n slash and sometimes run n gun.

are my favorite from each genre. Pretty casual games, except to kiki kaikai and alien soldier. As i said i value fun more than depth.

It's normal, your eyes and your brain can't keep track of everything
With time you'll learn where to look on the screen depending on what you wanna do. Such as looking where your ship is for precise micrododging, looking at the top of the screen for aiming at ennemies, looking in upper middle to see upcoming bullets you can macro dodge, ...

You will definitely be using your peripheral vision a lot more than most other genres. You will periodically look at your ship when you need to move carefully, but a lot of the time your eyes will just be fixed on the middle of the screen and your peripheral vision will allow you to see everything at the same time.

The scoring system actually forces you into the shallowest gameplay possible. If you want actual depth you would be playing JRPGs.
