Were Game Boy games specifially made with the DMG's creamed spinach screen in mind, and not just any monochrome 4-shades screen?

Good question. It's similar to SNES aspect ratio issue, it depends on the game. Some games are made with green in mind and some not. For example Gargoyle's Quest should always be played on a green tinted screen.

There's a couple of games like Road Rash that if you have them on cart they won't play properly on the GBC because they exploit DMG quirks that were revised on the GBC hardware.

The Pocket screen has a different look to it than the GBC screen, which comes down to preference, though the GBC screen is higher quality in an objective sense. Some (most? all?) Pocket screens have a propensity to have dark banding extending out from dark pixels, while GBCs do not, plus GBCs have a better refresh rate, so less motion blur.

The WideBoy, a device used by developers (and presumably publications, for screenshot purposes) during GB gamedev, seems to default to a yellow-green biased color palette.
Basically, yes, if you want the most authentic GB experience, you play on an original gray brick GameBoy, because that was the console that most people had, and was what developers had in mind, at least until the SGB (but competent devs would have kept the original GB in mind, since that was still how most people played GB games, and even those with a SGB would still want to take the GB on the go; Rare, on the other hand, seemingly forgot this, so the first Donkey Kong Land looks like absolute fucking dogshit on actual GBs, though to their credit, they fixed this for the sequel).

There's definitely something to the look of the original screens vs emulating the games in just basic black and white. They also just look disgusting on Gameboy Color and Super Gameboy. There are nice filters to recreate the original look on Retroarch so I just use those.
