I think Doom, Goldeneye, Halo and CoD-MW are probably the most influential fps games. They all had an overt change on how fps games after their release where made, for better or for worse.Quake was more of a continuation of what was there just more refined in fully 3d.

The default controls were dogshit. You had to edit a config file and add +mlook and then also remap WASD to be strafe keys and not "rotate left" or "rotate right" keys. Mouselook was not widely accepted until quake 2.
