I mean, it depends on how your feel about uphill battles and challenges. Ive beaten the game several times over ~25 years so I've had that fun of becoming a shit brickhouse from the ground up. If you just care about story and the outside of battle world then the only thing youd be missing are some of the cool monster designs and mechanics. I also don't know of Yuffies random encounter works if you turn them all off.

If you were just playing for story, you have to dig really deep into the game to see the full story.
Did you see Cloud and Zack's backstory flashback where they ride to Midgar with a farmer on an old chevy truck? It's one of the most important to the story but you have to go out of your way to find it.

The battle system can be enjoyed. I stay underleveled, stupid underleveled, by running from 2/3rds of normal battles. And when you don't battle much your materia is weaker too. There is a way to play this game where "attack to win" doesn't cut it anymore. If you go into a boss overleved and use summons and spam trine, it'll obviously be easy.

I didn't skip the story just because I missed one or two optional cutscenes. I got 99% of it, clearly, and while I enjoyed it I wasn't blown away so I don't really care that I didn't get to see Vincent being cucked. It's minor writing fleshing out a missable party member.

Exploring the world is a key part of world building, so is talking to random npcs and otherwise interacting with the world. Only watching important cutscenes doesn't give you that. Watching someone else play the game doesn't give you that. Whoever suggests a let's play for a jrpg must not have 2 iq points to rub together lol

The point of OP's bait is that the combat is inconsequential to the game. FF7 is already very easy, and the player isn't challenged by the combat until the optional superbosses. The story is the main draw, and combat, especially in random encounters, sits below the music, environments, screenplay, and minigames.

Literally yes.

Exploring the world, even if it's heavily railroaded and more or less linear in how it reveals itself is 1000% more interesting than a random combat encounter where I spam my best move and heal every 3rd or 4th battle. There is NOTHING interesting about most combat encounters in JRPG's. It's like someone took a modern action game like Dragons Dogma where you swing at a goblin in less than 2 seconds and evicerate it from existence and said "hmmm, what if we dragged this 2 second experience out into a 20 second one without adding anything to make it more in-depth or visually interesting?".

And yeah, it's not fair to just retro games against games made 20 years later but we can't just pretend we're still living in 1997 and erase our memories of everything made since.

Random Encounters serve multiple purposes, it's not easy to just eliminate them. And I'm speaking as someone who loves playing FF4 Free Enterprise, which heavily emphasizes boss fights and (usually) disables random encounters.
