The translation doesn't exactly help, but the all those names are true:St. Eva is how the god is known to worshippers.Evans is the flying old man you see before the final boss scene.St. Eva Church is the religion.Death Evan is the final boss.There's also "Evanaire", which is a fake name used in the quiz section when you enter the church.
DMC1's Mundus is basically a Death Evan remix.

The 2010 retranslation is Evanth not Evans which the s and the are a common error especially for 90s Capcom that didn't have a localization team for RPGs. Evanth is Evanthos, one of the names of the antichrist. Death Evanthos.
