1. 2.5D novelty, people will always find the binary space partitioning trick to be cool. also makes it very easy to generate content.
2. levels are self contained, you have a beginning, middle, end all in one shot. the pacing of most other fps games where you have a bunch of combat segments stitched together feels kind of sloppy in comparison. I don't mean to say they're worthless or bad but doom's cohesion has appeal because of this.

Doom 1's levels are literally designed so that they point you in the direction you have to go after getting a key or unlocking a door. It's almost impossible to get lost or make no progress in it.
