There are so many fucking ports and versions of these games. Which should I play?

Normally I play the original version of a game but for these I've heard it's better to play later revisions that have huge bug fixes.

I'd prefer to play with a keyboard but I can compromise. I'd prefer a version without automapping I think. I'd like to be able to use the same party between games. I like the monster art on the ps1 version. I like the overall style of the SNES version, I think.

I'm also open to fan version of these games if they are faithful.

Just play the SNES versions then for 1-3 and 5 since the.PS1 vers are only partial English. Skip 4 since it's a turd unless you know Japanese to play their PS1 remake.

They have some of the original version's English in them and you can change an option to get that much, but some stuff is still in Japanese only. The Japanese 4&5 PS1 game has the original 4 but also remake of 4 that is not shitty. The original 4 was poorly tested where the testers/reviewers just said lol I'm stuck and were given the solution by the developers, most of the shit has no ingame hints or anything.

You do get visual clues for warps, looking at a warp tile will "warp" your vision as well, so you see the place you'll warp to before entering the warp.
Obviously there are places that take advantage of this by warping you to a place that looks visually identical to the one that would've normally been in that spot, but the very first warp is easy to spot if you pay attention since you'll see a corridor in a place where it can't actually be on the map as you're about to enter it.

Is it playable with the Japanese/English? Has there really never been a fan patch or anything for it? I'm surprised since the Wizardry games are pretty popular

That guy's full of shit, the entire game is in English other than the story slideshows, spell descriptions, and enemy flavor text in the bestiary -- absolutely none of which were in the original game to begin with. You had to find all that stuff in the manual anyway.
Personally I do wish the bestiary was translated, since the enemy flavor texts are all original to my knowledge, and often contain useful tips on how to deal with an enemy, mentioning its resistances to magic and such.
However the PS1 version is uber casualized with automapping and no autosaving, so it may not be what you want for those unrelated reasons.

The remake of 4, the Arranged Mode of 4, has the same layouts and enemies and everything, it's just a different system where instead of summoning groups of monsters, now you just summon 1 of each but you can now issue commands to them. There's also a few more monsters to pick from at each summoning level.
You can also use those new monsters in the original mode using cheats. I know this because I'm the one who made all the Wizardry 4 PSX cheats.

This. You can turn also turn off all the music and effects and go back to wireframe and older monster portraits if you want. The PS1 versions also let you transfer between 1-3 and 5 on the same memory card, so that isn't even locked to the PC versions. Just read the original manuals before playing and you've basically got the same experience if you want it.

play Wizardry 1 on the gameboy and if it proves too hard use the stock recruitable characters already in the game instead of creating them from scratch since the stock characters come at lv 3 iirc and make the start of the game more smooth (the other versions don't have this handy feature), remember to make your own maps with a pencil which sounds counterintuitive at first but will make the game experience so rewarding, you can't even imagine.

One point in favor of the PSX version of Wizardry 4, they actually bothered to create a unique sky texture for when you finally reach the surface, which makes it feel even more epic after finally getting out of the nightmare that is the Cosmic Cube.
