I'm in the market for one, ideally I'd like something with at least an 8 inch screen, plain black and white, and buttons. Max price is ~$300.

Kobo Sage. You might get a refurbished Kobo Forma. But your requirements of buttons/size/price are unreasonable in the market place. You're going to have to sacrifice at least one if you want more options.

Kobo is the goat ever since Sony stopped making them. Avoid kindle at all costs. I still use my Aura on an almost daily basis, though it not having an USB-C is a pain in the butt. When I upgrade, it will be to another kobo.
