If you want, you can start out with the original '94 movie. It's not super necessary but it lays the foundation AND it has Kurt Russel in it. With SG-1, I watched all the way through season 8. Once Richard Dean Anderson stepped away and became an infrequent guest character, I stopped watching. The other actors were great too, but Anderson really made that show what it was. I'd also highly recommend Stargate Atlantis, I binged the whole thing last year. Sadly, after that show wrapped up the franchise went downhill.

For one, they heavily collaborated with the Air Force so their portrayal of the military is a lot more accurate than what you'd usually see in a show or movie. I think the other reason is that they try to keep the show grounded. For the most part, the military is working with inferior human tech. And even when they do get their hands on alien tech, they don't just magically reverse engineer it and become super badass. They're still on the back foot the entire time.
