That's not to say I don't want them to be real but I cannot believe in "dude trust me" stories and pixel soup "video evidence" that I could fake myself with just a few items from any local store.

Depends what you mean by "aliens".
If you mean extra-terrestrials, I agree with you that we're not interesting enough to be contacted ... and for such an advanced being capable of interstellar travel to be so incompetent and also humanoid.
If "aliens" and UFOs/UAPs are real, they're either humans from the future time-travelling here, or a secretive offshoot of hominids who now reside deep in the ocean and/or underground. Either is very extraordinary, and there's not nearly the evidence to begin to prove them (in the public's hands anyway). It's mostly indicative "evidence" like the fact they're humanoid, adapted to our atmosphere/gravity, can allegedly breed with humans, even the fact they're interested in us in the first place - at our level of development we would seem like bacteria or ants to an interstellar civilisation capable of reaching us (basically requires FTL). But future humans have a vested interested in humans in their "past" (how this all works is highly speculative). We've speculated in fiction many of the different ways time may work, how time travel creates paradoxes/impossibilities depending which way time works, and all sorts of stories involving them. IF these are future humans, we can actually rule out many of the ways we've thought time could possibly work (or physics models/theories that required time-travel to be impossible).
And if they're a secret terrestrial humanoid, they also do kinda have a vested interest in us not destroying the Earth - explaining interacting with us.

Point is real ETs from other star systems just don't make sense, advanced humanoids originating from Earth is at least a little believable though.

To a civilisation that can travel the stars ... we'd be no different to apes or possibly even bacteria/plants. Humans in the future do have an interest in seeing their ancestors past - we do this today with history, memoirs, biographies, myth, legend, religion, etc. If we could take even a peek back at supposed divine/magical events, we could settle many ongoing disputes. I do indeed want to, but I don't. Same as religion - life would be so much simpler if I had faith/believed, but I don't. My comments have all been predicated on the assumption that these aliens/UFOs/UAPs/etc. are real, and not some sensor artefact, lens effect, balloons, etc. - I'm a sceptic who likes to entertain these ideas as a thought experiment: IF "aliens" are real, what's the most likely explanation?
It's important to play-out the alternative scenarios, even if you're 99% sure your first assumption is right. 1% (and less) chances happen every day of your life. So even though I believe most of the footage that's been released or in the public domain have mundane man-made/natural explanations, I'm not arrogant enough to say not a single encounter was real. Without experiencing for myself, quite frankly it'd require extensive video and photo evidence along with confirmation from governments to convince me these are genuine ETs or future humans. I'm just saying future humans is more likely than ETs.
