Because the immortality of the soul is not a settled debate, that’s why.
Systems like Freemasonry DO NOT argue that the immortality of the soul is logically derived fact, they argue that it is rather a self evident fact.
Pike is quoted on this as saying:

They can argue it because there are very solid hypotheses as to how and why this immortality could function.
Mostly, you can either take the creationist dialogue or the emanationist dialogue here, and the emanationist is most clear on this subject matter.
The emanationist idea being:

Infinite regression tells us the following:
On a world with an infinitely long past, it would take an infinitely long amount of time to reach the present moment. A clear logical fallacy.
This tells us that time itself is not cyclical, which means that it needs to have had a beginning. A starting point.
So before time and material, there must have been some agent to have caused this starting point.
The agent of cause must be:

The only thing that matches this description is a mind.

On death you get an awareness expansion of this greater multidimensional reality and you take on the motives you had before you split a part of yourself off.
