The pace of the updates is kind of annoying given the fact that a blend file saved on an even slightly newer version simply won't open on a slightly older one.

Why is this tolerated? How can anyone be expected to stay up to date rather than linger on old versions when Blender aggressively refuses to be compatible with itself?

It's also kind of ridculous how frequently they're incrementing the main version number now. v2.0 to 3.0 represents an entire decade of development, But 3 to 5 is what, five years?

Gimp sucks huge donkey balls and isn't comparable to most Photoshop's advanced feature set. There's a shitload that Gimp still doesn't hold a candle to. Like ffs Gimp still doesn't have adjustment layers or smart objects. So you literally can't do shit non-destructively unless you flatten and merge every so often. Which makes it compltely useless for anything but very basic photo editing and hobbyist uses.
I'd use Photopea over Gimp any day.

Most new features, with the exception of Geo Nodes are mainly just QoL type shit and bugfixes. Nothing is particularly game changing, it's mostly a collection of "oh yeah, that's kind of nice, that'll make 'x job' a bit quicker and less of a pain" features. Geo Nodes is the one thing that's actually something substantial, and while it's present in things like Houdini, it's still fun to fuck around with and it opens up a lot of possibilities that you weren't able to do before.
For me, it still boils down to making shit that makes "x job" easier. Instead of spending an hour making a bunch of unique assets, I spend an hour making a nodegroup that does the same thing I was going to do by hand. Doesn't save much time, not really in the long run either since if you made the assets by hand. You'd still have the hand-made assets for other projects too just the same as if you re-used a nodegroup, but eventually those two lines intersect and GN makes sense. Especially when it comes to large numbers of things. Once you finish the nodegroup to make those assets, you're done, and can make any number of them you want, but doing something by hand you still have to keep making them by hand.
So yeah, still just QoL shit unless you're doing something really fucking off the wall wild.

Obviously small parts add up to a larger whole, and there have been big features added, but you're not missing much by not swapping to the newest thing. At most, aside from the big shit like GN or renderer changes, you really are missing small things that make tasks slightly easier.
I still use the newer versions since I find they perform better, but I'm still wishing they bring back the game engine or some kind of "interactable" mode that I can record to keyframes.
