Female mangaka typically write protagonists who are sonfu/husbando bait, so they are cuter/cooler than the average male self-insert, at least in female readers' eyes. Their male protagonists' also have a wider appeal thanks to their selfless goals and motivations. Typical shounen protagonist written by a guy is like "I want to be the strongest", "I want my face carved on a mountain", "I love punching people", "wooooo adventure!" They are often reckless, dumb, and their goals are selfish at their core even if there's a sad backstory to prop them up. This kind of MC activates the neurons of young boys and manchildren, and no one else probably. MCs in shounen and seinen written by women on the other hand (like Ed, Tanjirou, Laios, Yuru, Inuyasha, TRC!Syaoran, etc.) typically don't embark on an adventure for adventure's sake. Most of the time they are propelled by a desire to save their loved ones (and other humanitarian reasons), and a lot of them tried to enjoy a quiet life before the plot kicked in. Then the tragedy strikes, and the MC has to save their family, lover, country, the world, etc. This kind of scenario is more relatable to a wider range of people, especially women, who are less likely to understand and empathize with characters who put themselves in danger just for the sake of glory and for shits and giggles.

The amount of plot sort of increases over time but it stays pretty episodic throughout. I think around episode 13 or volume 5 of the manga it shifts a bit more toward the plot side.

Arakawa's stuff was (and still probably is) ridiculously popular. CLAMP used to be popular when they were still releasing stuff. Rumiko is still popular. etc.

To simplify my point even further, most shounen/seinen written by women boils down to "shit got fucked, time to unfuck it" which happens right at the start, not like midway through the manga. This kind of writing is easy to understand and extremely relatable to all (unlike characters like Goku and Luffy, whose brand of competitiveness and wunderlust appeals more to boys and men) and it's not always about lofty goals and virtuous characters. Stuff like revenge plots, "I lost my body and I want it back" falls into the same category imo. The stories written by men that are popular with women have similar kind of writing and/or compensate with copious amounts of fujobait, shipping bait, and cute boys typically designed by a guy who's at least a little bit gay so he knows what women like (Togashi and the author of JJK for example.)

Also like I said, male MCs created by female mangaka tend to be cooler, smarter, and more conventionally attractive. Shounen protagonists written by men tend to be bland or dumb as bricks, and for whatever reason a lot of male writers love to humiliate their male MCs (Renton, Shinji, the guy from Kaiju no. 8, etc...) and make them look lame. I don't think female readers like this. They prefer cool MCs like Ichigo, Ed, Senku or at least the type of cutesy loser they can insert into and ship with a more chadly character.
