Yeah I've been on a fish/rice diet for the last 2 years and I've got a lot leaner, I still have whatever I want for lunch but dinner is always fish/rice dish of some kind. It's cheap, easy to make and tasty.

I learned how to make a few Japanese foods and some other deserts specifically after seeing them in anime, like omurice. I often don't have all the authentic ingredients though, so I sub out a few things to make a more American version with what I have in my kitchen more often. I used to be more autistic about it and go to the asian grocery store to get stuff, but I don't do the grocery shopping in my house anymore.

Way back when Doraemon was airing its Disney XD dub in the U.S., they brought out packaged dorayaki to tie in with them. Each individual cake was branded with Doraemon's face and came with a little sticker set. I bought one from my local Chinese grocer just because I love Doraemon, and had never even so much as tasted a dorayaki before.

They were, without doubt, the best fucking Asian sweet I've ever had in my life. They were so, so unbelievably delicious. I used to buy them on at least a weekly basis, usually much more frequently, and gobble down a whole package in like a day with a coffee. They turned me on to dorayaki in general, and now I eat it whenever I can because I love it, love it, love it.

As proof of my dedication to this brand, several of the stickers from these packages now adorn the printer on my desk. Currently, I'm looking at one with the Dokodemo Door, one of Shizuka looking cute, and Doraemon flying with the takecopter. Thank you very much Doraemon for introducing me to this lovely food.

From what i understand, it's a mix of japanese homes being small, rice being eaten in almost every dish and basically being something set off and fuck off on your own.
I saw their appeal when i watched those 'salaryman routine' videos and how the guy recording would just set it off after getting home and then leaving to do other stuff, then getting back home with the rice ready.

I received a rice cooker as a gift and use it to make my rice. It's just as simple as cooking it on the stovetop and it comes out stickier than the stovetop method, which I like.

Supposedly the rice cooker can cook other things as well, but I've had middling results. Most of what I've tried cooking in there (short ribs, pulled pork, etc) tastes better and has better texture if I use my crock pot instead.

Yeah it's not that hard, it's just yeast flower and water (and maybe a couple bonus ingredients) in different ratios for different results.
I guess kneading the dough is a bit annoying but aside from that it's about the same as baking anything else.
There are types you can make in a rice cooker.

I'm a particular fan of the butter rolls.

You don't need a fancy expensive rice cooker, they don't help much, they're just a status symbol like an internet fridge.

A standard rice cooker is almost as simple as a kettle. Literally just a switch held down by a magnet made of an alloy that stops being magnetic above the boiling point of water. The cooker automatically shuts off once all the water has boiled away or been absorbed by the rice.

That's why companies can manufacture the whole appliance for like $10.

Not really, even after eating the real authentic "real deal". Japanese food is almost entirely French techniques, and French/Dutch/American/Chinese recipes. The closest you'll find to anything truly Japanese would be dishes that are primarily boiled, so gyudon and hotpot mainly.

Ramen? Chinese, with French techniques. Learn howbto make French stock and you can make "world class" ramen without all the wushu bullshit. And the dashi? Onions sauce, shitaki mushrooms, and kombu, literally that easy, the whole point of dashi is to add salt because the Japanese were poor when ramen was invented and concentrated sea water was used in the production of onions sauce.

Karage and katsu are dope but are just schnitzel made woth starch. Marianade is ginger, onions, and garlic. Dutch recipes and techniques.

Sushi sucks ass and is highly overrated.

Japanese curry is just British beef stew funny enough, and you can use 5 spice with cumin, coriander, and garam masala added to imitate the real thing. Brown your meat, potatoes, and carrots, as well as bloon your spices, and you'll smoke the best Japanese curries out there. Again, French techniques, British recipes.

Donburi is just dashi base with added sake and sugar. Throw in onions and beef for gyodon, chicken and eggs for oyakyodon which is a guilty pleasure of mine, with sweet carmalized onions, or katsu with egg for katsudon.

Once you've developed a moderate grasp of cooking, you realize theres literally nothing special about Japanese food. And grasping for authenticity just results in an inferior dish because authentic Japanese imfood is rather bland.

Anime did turn me onto sweet pickled daikon. I can eat that shit all day. Fucking love me daikon. Same with eel. But eel had nothing to do with anime. I gave it a shot at a sushi place and fuck me was it the best fucking thing I've ever eaten in my life.

I've baisically invented my own curry and figured out my own way to cook rice without a cooker, make me a 3-day pot every month to this day. Same. I tried making melonpan as my first bread in like 2007 when there were much fewer resources online to help me, and it turned out terrible. Now I can make some decent bread pretty reliably. I'd say anime is responsible for getting me more interested in food and cooking in general.

This was from a different time: when microwaves opened like ovens, didn't have rotating plates because the antennae in the top rotated instead, the magnetrons were made by the same defense contractors as the ones in radar systems and missiles, and automatic meat thermometers jacked into their stainless sides.

The important thing is mostly seeing the power levels and time for different things. What made them popular in the first place from the 60's+ was the ability to do oven like things in about half the time. Say you have a rack of ribs. Smoked would be best, but roasted in an oven isn't bad with good seasoning, like 375 for an hour. In the microwave, you would turn it to 3 (Roast) and put it for around 27 minutes. That's blazing fast compared to the oven, but most people don't run their microwaves like that. They'd throw it to full blast for 15 minutes and have it be a wrecked rubbery mess.

The toughness of microwave cooked stuff is largely throwing way too much power to it and being way too impatient. Since you're vibrating water with radiation to create heat, you lose too much water too quick and also don't allow heat transfer consistently.

That was one of the big advantages of the old ones without the rotating plates, too. You could take full advantage of the full volume and didn't have to worry about weight distribution. They just had giant glass square spill plates on the bottom. It gave you a lot more usable space for the size. Plus, they had more oven-like proportions so were taller. That cookbook has instructions for an actual whole turkey. It's kinda silly. I have a big modern Whirlpool at work, but the old Radarange at home can fit way bigger stuff at 3/4 the footprint. The old Corningware medium casserole dishes and large covered dishes are no problem.

Important thing is, you really need to push the boat out when you make something specifically Japanese. And in all honesty, that's the appealing thing about it. Common everyday asian foodslop isn't that appealing. What most people are looking for is the restaurant experience, with the ton of higly specilazed foodstuff, that makes it distinct.

Good rice, nicely cooked salmon with crispy skin, grated raddish, pickled ginger, avocado, onions soaked shitake, and of course some decent wasabi. None of that stuff keeps for more than a few days, and it's all a massive investment of money and time, just to have a semi-decent family meal for maybe a weekend.

If you have teenagers, you might as well keep to whatever is locally available, they gorge like pigs without chewing. Once they're older and learn not to inhale bigmacs, you have a shot at refining them.

The conbini food is equivalent to junk food. So I kinda avoided it as much as I can. They had one or two sandwiches I could eat but they were incredibly small and they get soggy easily.
The bread there is super sweet. I used to go to the supermarket and get baguettes cuz they were at least salty.
Their food is very processed, even the ones they sell in supermarkets. I mainly tried getting as organic food as possible but it was hard.
I also come from the Balkans where food is mainly locally sourced and I couldn't get used to the ultra processed food in Japan.

The development of cuisine is always a historic process and you are wholly ignorant of that.

No, because in China, noodle broths are generally not thick and fatty, the way ramen is. It's a fundamentally different dish.
The way ramen broth is prepared is also not French in technique and using French technique would prohibit ramen restaurants from offering more than one flavor of ramen.
The closest is modern "instant stocks", but that particular method didn't emerge until fairly recently and it certainly didn't exist when the modern recipe for ramen was developed.

Karaage and Tonkatsu are two different dishes with very different origins. Karaage is based on Chinese cooking, while katsu is 洋食. They also are only similar in that they are fried, but the method and intended result are very different. Also, I have my doubts whether you understand 洋食 as a concept, given how half the dishes you are listing are 洋食. Trying to recreate what these dishes were before being Japanified will, of course, be a somewhat middling experience, as these are all very old dishes, mostly from the Meiji period.

Also, Katsu does not use starch.
