Anime generally have to cut so much content to fit however many volumes into a season they need to that you miss a lot of world building and context etc. And even if they aren't going hell-for-leather cramming too many volumes in, the medium difference means stuff like lots of internal thoughts and commentary of the characters has to get cut.
