What’s the point in watching anime which are adaptations, when you can read the original for a fraction of the time, and get the creator’s original vision?

Anime is not a good replacement given it's degree of separation from the source material, but it can offer additional enhancements.

Sometimes the creator dies before the work is finished, or the adaption goes in it's own interesting direction, or it focuses on other things. One can almost consider it another layer of editing and a different interpretation of the source material, with all the potential benefits and drawbacks that it may entail.
Sometimes they are better, sometimes worse, sometimes equal.

One thing I can think of is that you sort of isolate yourself from the online discourse online. If you read only the Naruto manga, or the One Piece manga, you would not be able to talk about it in the same way with anime people.
