You go on a date, but all they have to talk about are spreadsheets they don't really care about or the weather. The difference is, her equivalent to those spreadsheets is a bunch of small, shallow facts about a wide range of subjects she lacks any particular passion for. You might find that breadth of knowledge fascinating, but she doesn't, and that's what makes her boring.
