The overall difference in quallity comes down mainly to personal preferences whether you preffer old or new art style and Yoshino's or Penkin's soundtrack.Regarding content, the main difference is that the new adaptation frames the entire story as a retrospective narrative which Holo retells Miuri in way much closer to original novels (so we get Yarei instead of Chloe and so on). Also first season finally adapted fourth book instead of skipping to fifth one as old adaptation did. So upcoming second season will start once again with retelling old stuff before we finally move beyond of original adaptation.

Despite how much it's memed up as the medieval economics anime it only dives into the economy stuff to a pretty shallow degree and doesn't teach anything that anyone already familiar with basic economic principles doesn't already know. Which made the economy plot points feel more like a gimmick and a distraction from the romance, which was only necessary because it wasn't a good enough romance story to stand on its own either. And at least for the case of the original Spice and Wolf anime and its changes, it was pretty much just an ad for the light novels so they just did whatever, like tossing in Chloe for some dumb love rivalry as if the next arcs wouldn't have that already. iirc old anime (and maybe even some new) being ads and doing stuff just cause happens to be the case a lot.
