Instead of cutting it into cubes, I just threw the whole 2 big pieces of chuck in there in the crockpot. Added half a stick of butter and a heaping tablespoon full of beef bouillon to the red wine and beef stock, which did wonders for not doing the rendering and searing. Just chucked all the veggies in there and set it to 3 hours of slow cooking, which is different than the 90 minutes simmering. Salt TT after done, because I didn't add alot of seasonings because of the bouillon. Turned out pretty fucking good.
