The story may continue and there may still be unresolved plot points but it is what the entire story was building up to and quality falls off a cliff immediately after. People always talk about wanting to see more of the dating stage but observable reality is that no one wants to see that. Any series that focus on couples or continues past the confession is inevitably cut short because people quickly lose interest. The romance genre is built on the will they won't they for a reason, thats what people actually want.

So no, it's not a lack of interest in post-confession interaction, it's a lack of interest in the bullshit maintaining of the original status quo in which the couple doesn't do things couples actually do. Don't even need to portray sex, just give me some sweet handholding and making out and affectionate dialogue.
