Everything I say applies to the US. Usually the EU has better consumer protections.So the seller sent DHL with no signature confirmation (you think) on a $600 euro parcel. At least in the USA the odds of a DHL carrier stealing a package is almost zero. Someone In your neighborhood stole it or it was delivered wrong.So you are going to have to file an item not received with eBay.They may find in the sellers favor because it was delivered. Again maybe it is different in Europe, I don't know.You can appeal this. You will need a police report. It is rumored eBay has a once per account per lifetime where they will cover this sort of thing but it is on a case by case basis.I would be calling DHL to get more information about the package, tell them it was never delivered. Ask them like where they left it, do they have gps coordinates of where the package was delivered, did it have signature confirmation. Do they have pictures of the package left on your porch or wherever. To get your money back, you will most likely have to put in some work.
