How do you gain the willpower to say that you want a certain school before you're even in school without feeling like a fraud? Doesn't help being over 10 years "too old".
My instincts tell me I need to seek out a TV show about it to have an aspiration but that seems really flimsy

This doesn't make sense. Of course you should decide a direction for your life early on, before setting to work to make it a reality. Hopes and dreams, along with whatever your talents and predispositions happen to be, set the direction and then a plan sets you in motion towards the goal.

I do not understand why taking the obvious best action to satiate my immediate needs requires any willpower at all.
Willpower is for when there are competing desires, and here there aren't any.

What I'm asking is how do I write to the school and tell them that I'm passionate to work in a specific field that I know nothing about? I want to be educated, to learn about math and physics because I know that its useful. I like knowing things, and I like money. I just have this mental blindness in between "knowing things" and "making money"
