Hi, so there was this girl at work that I've been trying to approach and I found out she left the company while I thought she was on leave. I know her socials tho, if I message her telling she should've told people she was leaving, do you think she'd take it the wrong way? What should I tell her to not sound upset and still have her reply

Don't mention that at all. Say something like "People are always telling me I shouldn't ask out a co-worker, no matter how attractive she is. But apparently you've left! So, er...." (winking emoji)
