I have an interview this week (I will likely be hired as it's the second stage of the process, and someone in the company told me that I am all but given an offer sheet by that point).

Unfortunately, I am going on a vacation at the end of the month and won't be back in town until Valentine's Day.
Before you sperg out, I had this vacation booked months ago, and didn't expect to get a job offer at this time.

If I do get the job, I would probably be offer-sheeted either January 16th or the 19th.
How should I go about letting them know that I can't start until mid-February?

A friend told me not to disclose any information, and just let them know that my start date is "February 15th" (something along the lines of a traditional 3-week notice).
Whereas my parents got pissed off and told me to tell them the truth, and that I can start as soon as next week, but will need the 3 weeks off for an unpaid vacation immediately following my 'orientation week'

I'm thinking "who cares, if they wanted to hire me, they wouldn't care that much about me starting 3.5 weeks after my interview".
On the other hand, if they really want me to start ASAP, and I hit them with the "can't start for 4 weeks" they might just can me before I even begin working there.

How would you go about this?

It depends a very great deal as to the reason for your vacation. Is it for funsies, or is it something serious?
I did this to my employer back in the late 90's, but the reason for my vacation was getting married and the honeymoon. I was upfront with them about this during the interview period, and they were fine with it. When we got to the hotel for the honeymoon we found a giant basket of alcohol and chocolate and strawberries from my employer. And my next pay period I discovered that they had paid me for the time off anyway. But a few years later that same employer declined to hire a prospect who wanted to do this for a cruise.
