What do I do when I find out that the person that cared about me actually doesn't care about me at all and was only pretending to care?

People never care 100% of the time all the time. People care only care 100% of intensity but never over constant 24/7 timelines. Because people get tired, people get bored, people get moody, people get hungry, people get sleepy, human emotion isn't static. At some point the human will be in a moment of not caring, which is okay, but they also know they need to still be there for their loved one so what they do is they will pretend to care when actually they feel upset or angry or whatever. And they do this not to fool or lie, but to live up to the responsibility of being a dependable person.

There might be a few who reach 100% once in a while, but There are pleanty who never reach 100%, and people who never care at all.

We need more context behind this. If someone takes time out of their day to make sure you are doing alright then they do care about you. People tend to be busy with a lot nowadays so you might be wrong with your assumption.
