How feasible is finding a person with only:
- first and middle name
- age
- country
- profession
to go on?
In theory that narrows it down to a pretty small pool but in practical terms it seems near impossible to search without a last name or phone number.
How would I best go about this? Thought about hiring a PI but that's like an absolute last resort

About 15 min to be honest

What do you mean "find"? Do you want to know their location, find their social media, see their face, know who knows/employs them?

Depending on what profession it is, I'd try checking that country's registries of professionals in that category, or the lists of graduates that schools/universities sometimes publish.
If the person does not appear in there, I'd try checking other countries' universities' lists, I guess.
Then I'd check each match's Facebook, LinkedIn, and/or Instagram profiles. There might be software to help speed up this search. Their profiles, pictures or style of posting might confirm their age or contain whatever you want to find about them.

Or, and this is a long shot, you could use the antique "chain letter"-style strategy: inquire among your friends and acquaintances and ask them to forward your inquiry to any person they know that they think might have a better chance of knowing your quarry or someone who knows them.

Just a phone number, or any sort of social media I could use to contact them. Already know their face.

Don't think it's the sort of thing that has a registry, and I know for a fact they don't have any sort of degree.

Is not having a middle name more rarer than not having a last name?

I don't know if they still hold up but Ghunt and another old tool helped me get a fullname, phone number, email, and password length for a friend's old Facebook account. That laptop is gone so I can't check what I used exactly, but it was with a few OSINT tools. I'm sure I used Ghunt again to help another set of friends find someone on Discord, but that was on the same laptop. I can try finding tools again later if it helps

Can you explain a bit about Ghunt and how it works? Looks like it needs an email for the person, which I don't have, unfortunately.
Only contact I had was through discord, which is why I was hoping to rely more on biographical information to find them.
