How do I tell my manager that I'm sick of the understaffing and being expected to do the work of three people while still only getting the pay of one? And tired of being called on my days off?

In a way that won't get me fired.

If all of that's actually true, he won't fire you, and if you live in burgerland or even better Europe, you could have a lawsuit on your hands if he does fire you (depending on local state laws). Tell him (respectfully) that you could use some extra help in the job, and that you're not going to be able to come in on your days off anymore.

Present him with a thought-out, possibly written presentation that shows that the company (and thus HE) is losing money by not being able to deliver value to customers with so few resources.

And when he calls you at home on your day off, politely say that you have other obligations and can't come in.

this is an excellent opportunity to get a raise. you have all the leverage, since obviously if you don't do the work they have no one else to do it. also never go in on your days off. you are always busy on your off days as far as they're concerned.

I can say this is true. I sometimes had to do the job of 2 people until I stopped and simply did the job of 1. Suddenly they would always send someone to help.

Op if you keep doing the job of 3 people they will see it as you being soo good you don't need anyone so they won't bother getting more people

This is a feature, not a bug. You are a wear item in the machine. The time to say something was before you accepted the extra work and proved to them it was possible.
Update your resume and find a better job, and this time stick to what is on your contract instead of being a self-sabotaging people pleaser.
