How do I tell my manager that I'm sick of the understaffing and being expected to do the work of three people while still only getting the pay of one? And tired of being called on my days off?In a way that won't get me fired.

Tell him (respectfully) that you could use some extra help in the job, and that you're not going to be able to come in on your days off anymore.

Op if you keep doing the job of 3 people they will see it as you being soo good you don't need anyone so they won't bother getting more people
