Aside from testing the dog as much as I can and instincts, what else can I do to make the dice roll of dog adoption have a better chance of rolling boxcars instead of snake-eyes? We're going to a state pound, a humane society and an out of state shelter (we live on the border.) on Friday. I just want a calm 1-4 year-old dog to be my companion for the rest of its life.

inb4 shitbull. It was my ex-wife's. I needed a pic. No pitties, labs, huskies or puppies. Too much energy.

I'd also like to know.
Like any behavioral cures or the like? Physical characteristics to look for, something in the dog's history, etc?

Volunteer at the shelter a few hours for a few weeks and help with walking the dogs or cleaning cages. See if there's a dog you get along with. If not, move on and retry at another shelter or wait a few weeks and retry the same one.

Also most shelters will let known volunteers temporarily "foster" low risk dogs with the idea that if it works out they'll be adopted and if not it still temporarily opens up a cage. Lets you have a trial period to see if it works.

Try to find out why it's at the shelter; sometimes it's just somebody has a kid now and doesn't want to deal with the added complications, sometimes it's because the dog barks too much, sometimes they won't tell you the reason for """privacy reasons""" because the dog growled at the wrong person.
Maybe it doesn't get along well with other dogs and the neighbor that just moved in has 3.
Try to see if it knows any commands; sit, shake.
If it's shaking or seems nervous, try to figure out if it's sensory overload from 20 other dogs barking or if there's a deeper issue.

unironically just look for the slightest hint of Pit Mix
a neurotic dog that's NOT a pit mix is still head and shoulders better than a pit mix, because the pit mix will freak out and ruin your hand, or your other dog, or your kid, or your wife's face, or...

Talk with the people working there. They will help you in finding a dog with temperament and personality you're comfortable with.
