I am currently sanitizing the jar I used to make the hot sauce in and going to attempt to make a second batch. I'll be doing habaneros, serranos, and a couple of dehydrated carolina reapers. Same seasoning set up as last time, but this time I am going to up the garlic and onion content and nix the bell pepper. Also going to try and do a 50/50 mix of apple cider vinegar and white wine vinegar. Also going to do a two week fermentation instead of 10 days. Hopefully it will have a slightly more acidic and spicier flavor and it should be significantly less sweet.
