They’re called bitterballs because they were traditionally eaten with bitters.
In the 18th and 19th century people drank herbal “bitters” and served small fried meat balls alongside them.
The snack itself wasn’t bitter, it was meant to balance the bitter drink.
The name stuck, even though modern bitterballs aren’t bitter at all!
