They can also use tokens from other chains. So for instance, on Bifrost you can use vETH to pay the fees if you really want to, while also being able to use DOT, vDOT, BNC, GLMR, vGLMR, ASTR, vASTR and 6 different types of ETH.

From my understanding the only chain that gambling really took off on is Polymarket. I think I even heard Joe Rogan mention it on his podcast and no it wasn't an ad he was just like "what's polymarket say about this?" which tells me he uses it regularly. Either way, I would have never guessed it would be Polygon but I guess as the time it seemed like the best option or maybe it was the fastest cheapest alternative at the time. I think this was before even shit like Base came out. I don't remember, it was a while ago.
