Almost all countries have a tax about capital gain, you could try to avoid paying it if you don't want, but what stops me from going into a coin shop/bullion dealer and buying 5 oz of gold at the current price paying with my own 5 oz of gold that I bought back when it was sub 1k€ an ounce?
