Just got my first credit card. $1000 limit. Why shouldn’t I take out cash to buy crypto and simply declare bankruptcy?

You'd unironically be better off getting a bunch of cards and going into a multi-year death spiral. Also there's usually a fat fee for cash advance on credit cards anyway. Not sure if there's platforms that let you use CCs directly.
