is home made much better than decent store bought mayo? I use mayo infrequently enough that I would have to make it every time I need it vs a jar of store bought can sit in the fridge for 6+ months so it would only be worth making if the difference in taste justifies it.

You don't have to make a whole jar of homemade mayo. Just make enough that you think you can use in a 1-2 month period. Also yes, it is much better homemade.

I made some olive oil mayo with just oil + 2 egg yolks and a fork to whisk it. Is sort of labor intensive but fun to do and texture and taste is obviously going to be great.

honestly, I would probably be even more inclined to make my own mayo if I used it that infrequently. I make my own when it's an important part of a dish that I'm putting some care into. the jarred mayo is just for everyday use like slapping on a sandwich or something.
the quality difference is pretty signifigant imo, and it's actually pretty easy to make if you have an immersion blender or food processor. only takes a couple minutes. longer if you have to whisk it by hand I guess, idk if that'd be worth it.

If you have to use a lot of mayo then it's worth learning how to make it so you can make it in big batches and save hundreds of dollars.

Forget the mayo and look at what else you are eating and could learn to make yourself.
I tried to make mayo once and failed. Won't bother trying again.

Obviously not worth if the amount you need is just as large as the egg yolk you would need for mayo when making it yourself.
Flavourwise the difference shouldn't even be that huge. Most people use way too much or less vinegar so it tastes different. Same if they use lemon juice instead though it drastically changes the flavour compared to storebought stuff. Some addd so much mustard that it''s barely mayo anymore.

I put the egg and the oil in a jar and used the immersion blender like everyone shows on Youtube™
Literally nothing happens. It doesn't thicken, it doesn't turn white. Add more egg, add more oil, change how I am moving the hand blender, doesn't change anything. It just came out as pure liquid. Not worth the effort trying to figure out why it wasn't working.
