I also just like the classic fries, gravy and curds. this place near me has like 100 varieties of poutine and the regular is what I get 9 times out of 10. once in awhile I'll get one with meat - bacon, sausage or chicken - but that's as far as I'll deviate. I don't care for any of the wild fusion poutines.

Honestly I've always loved cheese fries, nacho fries, etc. I will never understand why poutine isn't more of a thing here in the states. Potatoes cheese and gravy is such a tasty combination.

How would you describe a Canadian brown gravy?

Carne asada fries are the local version, with cowboy fries (topped with pollo asado) as an alternative.
Since covid, there's been a noted tendency to skimp on ingredients and price gouge.

Sometimes I make chili cheese fries. Some fast food chains offer them as well, but fast food chili is frightening since it's basically a simmering trash can.

horrible looking cantines that seem on the verge of falling apart always make the best poutines. Their gutter oil is necessary for the fries to achieve the correct amount of browning and sogginess.
