There was a place near San Luis Obispo that would sell really expensive turkey turkey that was like a wood plank you'd have to chew/suck on forever to start to eat. Like it's hardtack jerky.

Try checking out your nearest farm co-op/store to see if there's any sold there, but the best way is to make it your own if you can. I had a guy who made some of the nicest turkey jerky I've ever been blessed to try; long, twisted, rock-hard strips that are so hard you could cut yourself on them, but that sort of "meat chip" or "meat hard candy" texture and taste was divine.
