Cut a piece of thin silicone mat. Craft cutting mat,cutting board or whatever. I've seen people do it for kinu. Should be able to just lift the flap up and jam your dosing tray in. That my83 grinder in the OP uses the mxcool aries burr btw. The 12 core from Artefetto.

the water tastes fine, almost the same as the hot water from my tap, and i use that in my kettle for the last year and it has no scale build up in it.
back flushing seems much simpler, can i just do that instead?
any aus anons have any water testing kits or whatever they recommend?
i think the water in my area is labeled as "soft" but i know it can depend on your own buildings pipes and stuff so maybe i should just do some testing to be sure.
oh and im just putting it through a generic water filter before putting it in the tank
but the machine did live in the sydney area before it got to me so, i guess thats the more important detail.

Second Aeropress brew today. I tried the inverted recipe from the sticky. It was difficult to hit the pour masses precisely and I could only fit about 240 g of water in, compared to the 275 g called for. I steeped for an additional minute, as the linked YouTube video suggested. The press took a little longer than 30 s and the total brew time came to about 4.5 min. This time I could taste something, but still quite mild compared to my Moka brews. I can see why the smoothness is popular though.

ive just now looked at the sticky for the first time in a while to check the recipe you used. curious that it recommends three pours including a bloom for the aeropress, as a full-immersion brew isnt going to benefit significantly from multiple pours or preinfusion, but perhaps its intended to allow you to fit the entire dose of water, considering you had difficulty with that.
if you prefer the body you get from you moka, id recommend a metal filter for your AP. you can get some really rich brews with one.

Drinking Italian roasts if you’re used to specialty, which is 100% arabica, gives you a “cultural” shock when you try robusta rich dark roasts. Besides the over roasted oily trash, which is done by supermarket tier roasters for the great distribution and almost everything associated with “Neapolitan coffee” (except Saka!), moka pot naturally over extracts coffee because that’s how it works (it’s up to you to dial in with your grinder) but when you brew a pre ground dark roast which has the same size as a generic pre ground medium roast, it will taste over extracted simply because the darker the beans, the easier will be the extraction (more so when you don’t have control over water temperature).

If a coffee has burnt and oily beans it’s unsalvageable though
