i normally dont keep one anymore. I leave the grease in the pan to reuse the next day, if the grease isn't desirable due to being too old I will just chuck it.

I use it up. If I fry up a pound or two of bacon or sausage for breakfast I throw in two or three pieces of bread to soak it up then I make fry bread then eat that.

If you're smart you cook certain foods together that complement and absorb anothers grease. I never need or have used stored grease.
