Every year or so I break my diet and make fried rice. I open one of the rice bags I cycle through in my preppers pantry and I make rice then refrigerate for a day or two. I then add egg, peas and a packet of "fried rice seasoning".

So... what is that? How can I make fried rice without it? TIA!

I eat what normal people do. Various meats like beef, chicken, turkey, lamb, pork. Nuts and cheeses. A good bit of dairy. Seafood including fish, lobster, crab, shrimp, scallops. Vegetables like spinach, mushrooms, and cucumbers, zucchini, some squash. The odd few pieces of fruit or blueberry or strawberry weekly. Every few weeks will have a potato or make a cauliflower crust pizza or just make a crustless pizza which is much healthier.

Personally, if you're not going for wok hei with a wok and a super powerful burner, the kind of burner most people don't have at home, you can just use butter or lard and it will taste much better (or, even better, schmaltz for chicken fried rice), but if you insist on using industrial waste products, you do you, bro.

I'll take that miracle oil for cooking "industrial waste product" over many other oils bro. You can keep following fads and memes but when you put butter, lard, olive oils, coconut yadayada oils side by side, Canola BTFOs all others in just about every metric. Its healthier for you, it has a higher smoke point than most, it's cheaper, it's more abundant and available, it's neutral tasting so you can use it in anything, it has better non-stick properties than other oils or fats, has more vitamin k, vitamin e, omega 3's than butter, it's more shelf stable and doesnt require refridgeration, it's a fucking miracle oil. There are very few times when I wouldn't use canola. They are few, but they exist.

I just try to put the healthy things out there first and if they don't work in an application, I'll fall back onto inferior oils or animal fats.

Depends what kinda flavor you want. I like salt, msg, soy sauce, maybe a bit of white pepper. Though fried rice is mostly about the chef's technique, "wok hei" or toasty notes.

Use whatever oil you want, just not sesame oil that shit will scorch. Animal fat is nice to use too. though usually it's from the ingredients added and not the cooking oil used.

only worked at asian restaurants - jap, chinese, and korean
most basic and what restaurants generally do in order:

egg scramble
rice (not too moise/more dry better)
paprika (color)
garlic, onion, chicken powder
msg
fry/toss to nicely mix everything
last w/ soy - make a little hole in the pan and pour directly into bottom - let it reduce/'burn' a bit before stirring it in. this kind of imitates adding it to the super hot rim of a wok
finish w/ sesame oil, black/white pepper
to make even better add a bit of butter at end
keep it simpel


My favorite fried rice is just above with bacon made first so grease is used as oil for egg and rice, thin slice jalapeno, peas, and green onion. No white pepper, just black added a bit earlier.
