I've started putting corned beef and a hit of mustard in my mac & cheese. Ever try this? What are some of your funky mac & cheese toppings?

I personally don't enjoy corn in my mac n cheese. I know cheese and corn is a thing in places like Japan and Korea.

seems like an absurd amount of mustard
cut down on that a little and add some sauerkraut instead, have a sort of Reuben mac

Unironically, Marmite.

Most I’ve done is a little mustard or pickled jalapeños, it’s all about the cheese for me

depends on what kind of mac 'n cheese I'm using as my base. my favorite comfort mac 'n cheese is the Stouffer's one, always hits the spot after a long day at work. things I've put in it include:
>broccoli
broccoli and cheddar is a classic combo. but don't buy the one that comes with broccoli, it tastes watered down.
>crushed nacho Doritos
spicy nacho or regular nacho depending on your preference
>crushed Goldfish
I like the crunch. I go with basic cheddar usually. hell, any cheddar cracker works- cheez-its, store brands, whatever. I've been meaning to try the old bay goldfish tho, I'm curious.
>hot sauce
Gochujang or sriracha. Both are pretty good.
>bacon
A classic. I've done it with turkey bacon, too- the texture is weird but the flavor goes pretty well with it.
>cheese crisps
tried cheddar and parmesan. too salty.
>gluten free "chips"
specifically, these:

they taste better than you'd think. my sister bought them and i tried them, genuinely one of my favorite additions. the same brand makes a regular garlic and herb cracker that I just tried today, the crackers are good but nowhere near as good in mac n cheese. the seasoning powder falls off and collects at the bottom of the bag. the crackers are buttery tasting and remind me of the sesame street crackers that I loved as a child, I might buy them again
