I bought the gf a 20lb princess pumpkin so she can make infinite PSL syrup as well as lots of pumpkin pies and stuff. It has been roasted and then she will puree it and freeze in vacuum bags in 2 cup portions or something.

Well I forgot that using a fine mesh sieve always makes better puree. You remove some of the fiber when straining and it actually improves the flavor noticeably along with the texture. I may have a pumpkin pie to share today or tommorow. :D

I make pumpkin spice moonshine.
I proof down everclear with cheap apple juice until it's 66% ABV then infuse with pumpkin spice mix.
Allow to infuse in the freezer then milk wash it.
Proof down further with high quality apple cider, put a bit of clove and cinnamon in each glass, label and hand out.
Extremely sippable.

Yes it does. Every single recipe for a pumpkin spice latte has pumpkin puree in it. Even starbucks uses real pumpkin in their psl.(I hate starbucks)

Basically you mix water, sugar, pumpkin puree, and pumpkin spice together to make a PSL syrup that you add to a latte or whatever else you want. It just wouldnt be the same without the pumpkin. :(

First pumpkin pie of the season has been made. Made with hand milled, but not strained princess pumpkin puree. Gf was too lazy to strain it. It is a lot of work to strain purees. I will have to help if I want the best puree possible.

Princess pumpkin is an excellent variety for cooking, and it may have been stored for months, which improves the flavor. The puree is suprisingly sweet and flavorful.

For the second pie of the season I plan on making a pumpkin, rum, and pumpkin spice flavored custard pie rather than a traditional pumpkin pie.

I did it! So...

I took roasted pumpkin puree and strained it through a fine mesh sieve. Into a pan where I reduced it by roughly 30%.

Then! I made a custard with pumpkin spices and vanilla in it! Came out lumpy, so that went through a fine mesh sieve and it became perfectly smooth again.

COMBINED PUREE AND CUSTARD, SLAPPED IT INTO A GRAHAM CRACKER CRUST! Now it is baking in the oven at 350 degrees until it reaches an internal of like 175 I think. Checking on it in 30 mins.

I came up with this idea entirely on my own, but apparently the french make a pumpkin tart almost exactly like I am. Will post pics when it is done. The pie filling tasted incredibly good and was perfectly smooth, so I have high hopes for this one.

Here is the result. Sadly it cracked, but whatever... Ill post a review + slice pic tommorow when it fully sets.

40 mins at 325. I decided to add water to the tray because custard. Feels pretty done, but I have no clue. The custard was already half set when I filled, so it should hopefully be good.

I had a piece. Very good. Perfectly smooth pumpkin and pumpkin spiced custard on a graham cracker crust. Exactly as you would imagine. Almost reminds me of pumpkin ice cream even tho I have never had pumpkin ice cream...

In my experience, you'll get the most accurate taste with purees. Anything else is a gamble as to if it tastes like true pumpkin or not.
