Just got into this and this has to be one of the most underrated grains.

Other than that, and perhaps the fonio variety eaten in West Africa, I don't know of any other use for millet that isnt better served by other grains. Popped amaranth is superior to popped millet for alegria, and I'm convinced it's use in baijiu is simply a historical quirk that is unecessary.
