Just got into this and this has to be one of the most underrated grains.

I like toasted millet in my mongolian milk tea, especially with grassfed fat-tailed sheep tail fat. Other than that, and perhaps the fonio variety eaten in West Africa, I don't know of any other use for millet that isnt better served by other grains. Popped amaranth is superior to popped millet for alegria, and I'm convinced it's use in baijiu is simply a historical quirk that is unecessary.

I eat it with braised meat. It pairs well with more sour sauces and when cooked a bit mushy has a nicer consistency than potatoes or the barley groats I usually eat
