yeah that's basically how you're supposed to eat them. boiled or steamed, some sauce like mayo, aioli, butter, or french dressing, dip and eat the fleshy bits. it's a lot of work to eat but it's nice.

We always did a dip made of melted butter, garlic, salt, and hot sauce.
Alternately, cream cheese with a bit of hot sauce to make it faintly pink.
