If you make sauerkraut or kimchi, those are great in an omelet. Fried onions are also good. I prefer a small omelet with a modest amount of one of those (and some cheese) + a side salad of some sort vs. shoving it all in the 'let. Use plenty of herbs and spices for extra low-level gains.

Mix some cottage cheese in with the eggs for an extra protein buff, it blends readily and helps fluff things up.

Onion and green onion are very good with eggs

A great way would be to roast your veggies separately; onions, red onions, green onions, carrots, parsnips, radishes, daikon, zucchini, cabbage, red cabbage - perhaps lengthwise and roasted until the water is out and you get some nice color on them, then cut up em after however you'd like. Make your omelette with a bunch of eggs and oil of choice (butter), but leave the top part of the egg circle gooey-but-close-to-done, lay your veggies in, sprinkle topping layer of salt, could optionally drizzle some olive oil over if it fits what you've done so far, then fold over like a tortilla.

Could also put in some cheese too, but remember cheese is salty.

this is an important step that a lot of people are skipping and making something that tastes fairly bland because it adds extra water. eggs taste good with a lot of onion cooked until it gets sweet too.

salsa added after cooking is an easy way to make it taste good while staying healthy and adding in more vegetables. mushroom gravy or a vegetable/soy sauce gravy is good too kind of like egg foo young from chinese restaurants.

Consider
Olive/Avacado oil over butter
Lean non processed meats like lean beef or chicken
Almost any vegetables you feel like. I think onions, bell peppers, jalepenos, and/or spinach sort of work best but theoretically you can do whatever.
