First up, we've got the Laoganma Hot Chili Oil, which is thick paste of chilli flakes and peppercorns and is for some reason adorned with peanuts.Second is the Lee Kum Kee Chiu Chow Chilli Oil. It's a bit oilier and consists of finely ground chilli flakes, peppercorns, and seeds.And third, the Laoganma Crispy Chilli Oil which is filled with bark mulch and soy beans which I think are fermented or something.

Very funky flavour with the soybeans, also very little salt again and probably less spicy than the others. The flavour is much more complex than the others in that it's not bright or spicy or salty, but very savoury and rich. It tastes pretty terrible though imho and the bark bits look like scrap plastic that was meant for recycling.

The LKK one is very salty so if you plan your meal accordingly it can be quite complimentary to nuder or stir fries and even just plain rice. Anything that you'll be adding spice, garlic, salt, and oil to anyway you can just use some of this to cover all bases. >>21584478yeah but it's not just chili flakes, it's also szechuan peppercorns, garlic (if you're making it good), salt and maybe some other stuff. and then you want to toast it but not burn it and then you have to store it in a way where the oil doesn't go rancid and frankly this is already kind of a pain. maybe if I ate it often I could stock up on the simple ingredients and make small batches from time to time. but, I just don't eat it enough.
