dad bought beef shoulder and i cooked it in the oven for 4 hours with lots of red wine, shallots, carrots, rosemary and served it with plain potatoes. it was very good i liked it tastes like childhood

Make sure you're taking care of your parents and feeding them healthy clean food, you should try getting into seafood more, it won't be as time consuming and it's worth cutting back on all the red meat assuming the seafood is sustainably sourced

One tiny nitpick is it would be nice to serve a green salad with your meals. Something simple like cherry tomatoes, cucumber, onion, and lettuce would be a perfect accompaniment to your meals.

you kinda remind me of me with my parents. not the me cooking part but just enjoying time with them. my moms got terminal breast cancer, they only gave her a few months and that was 2 years ago, she won't be around that much longer but responding to treatment well. hope you cherish your time with your parents, which i know you do, cause they wont be around forever.
